In 2015, after the Ferrandi school and an international career in big houses, chef Fabien SAM created his own restaurant, La Fabrique de Bouchons, settling at 17 rue Brochant (17th).
A year later, he bought a photographer's shop at number 19 on the same street to create Kalypso Comptoir Marin, a restaurant that offers refined seafood cuisine.
In 2020, he transferred the Fabrique de Bouchons to the adjoining premises of Kalypso and created Caducée Café Contemporain, a hybrid place where his bistronomic cuisine combines land, sea and vegetables and rubs shoulders with specialty coffee and homemade pastries served all day at the restaurant. counter.
